- 150 g Long-grain rice
- 0.5 medium Cucumber
- 1 medium Tomato
- 0.25 medium Red onion
- 30 g Kalamata olives
- 80 g Greek yogurt
- 1 clove Garlic

- 2 tbsp Olive oil
- 1 tsp Oregano

Instructions
- 1~15 minDice chicken; marinate with oil, lemon juice, oregano, minced garlic, and salt for at least 15 minutes.
- 2~1 minCook rice per package directions.
- 3~4 minThread chicken on skewers (or cook directly in a grill pan) over high heat 3โ4 minutes per side.
- 4~5 minGrate cucumber, squeeze dry, and mix with yogurt, a small garlic clove (minced), lemon juice, and salt for tzatziki.
