- 300 g Lean ground beef (90%)
- 1 large Sweet potato
- 200 g Cottage cheese (2%)
- 1 whole Avocado
- 2 tbsp Taco seasoning
- 1 tbsp Hot honey (or honey + chili flakes)
- 1 tbsp Olive oil
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 1 tbsp Lime juice
- 2 tbsp Fresh cilantro

Instructions
- 1~1 minPreheat oven to 400°F (200°C). Peel and dice sweet potato into 2-cm cubes; toss with olive oil and a pinch of salt.
- 2~25 minSpread on a lined baking sheet and roast 20–25 minutes, flipping once, until tender and lightly caramelised.
- 3~6 minWhile sweet potato roasts, cook ground beef in a skillet over medium-high heat, breaking it up, 5–6 minutes until browned. Drain excess fat.
- 4~2 minAdd taco seasoning and 60ml water; stir and simmer 2 minutes.
- 5~1 minHalve and slice avocado; squeeze lime juice over it.
- 6~1 minDivide roasted sweet potato between two bowls. Top with seasoned beef and a generous scoop of cottage cheese.
- 7~1 minFan avocado slices alongside.
- 8~1 minDrizzle hot honey over everything. Garnish with cilantro and serve immediately.
