- 2 medium Zucchini
- 200 g Cherry tomatoes
- 60 g Feta cheese
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 cloves Garlic
- 1 tsp Italian seasoning
- 0.75 tsp Salt
- 0.25 tsp Black pepper

Instructions
- 1~15 minCook quinoa in 320ml salted water; simmer 15 minutes, fluff.
- 2~15 minRoast diced zucchini and halved tomatoes at 400°F (200°C) with oil, Italian seasoning, salt for 15 minutes.
- 3~2 minSauté shrimp with garlic 2 minutes per side until pink.
- 4~1 minDivide quinoa, roasted vegetables, and shrimp among 4 containers.
- 5~2 minCrumble feta on top; drizzle with lemon juice. Refrigerate up to 3 days.
