  • 600 g Chicken breast or thigh (sliced into strips)
  • 200 g Mushrooms (sliced)
  • 1 whole Yellow onion (sliced)
  • 200 g Sour cream (full-fat)
  • 100 ml Chicken stock
  • 1 tbsp Dijon mustard
  • 1 tsp Paprika
  • 2 tbsp Olive oil or butter
  • 1 pinch Salt and black pepper
  • 2 tbsp Fresh parsley (optional)

Instructions

    Season chicken with salt and pepper. Heat oil in a large pan over medium-high; brown chicken in batches; set aside.

    In same pan sauté onion until soft; add mushrooms and cook until golden.

    Stir in paprika and mustard; add stock and bring to a simmer. Return chicken; reduce heat and stir in sour cream; do not boil.
