- 600 g Chicken breast or thigh (sliced into strips)
- 200 g Mushrooms (sliced)
- 1 whole Yellow onion (sliced)
- 200 g Sour cream (full-fat)
- 100 ml Chicken stock
- 1 tbsp Dijon mustard
- 1 tsp Paprika
- 2 tbsp Olive oil or butter
- 1 pinch Salt and black pepper
- 2 tbsp Fresh parsley (optional)

Instructions
- 1~12 minSeason chicken with salt and pepper. Heat oil in a large pan over medium-high; brown chicken in batches; set aside.
- 2~8 minIn same pan sauté onion until soft; add mushrooms and cook until golden.
- 3~13 minStir in paprika and mustard; add stock and bring to a simmer. Return chicken; reduce heat and stir in sour cream; do not boil.
- 4~7 minSeason to taste; serve over rice or egg noodles with parsley if using.
